It’s like Christmas cake in a glass! Pedro Ximénez (pronounced “pedro hem-meen-nez“) aka PX aka Pedro is one of the world’s great sweet wines (in fact, one of the sweetest there is!) and one of those ‘must try before you die’ styles if you’re a wine lover.

This rare white grape is best known in southern Spain but the guys at Turkey Flat actually have one of the Barossa’s few remaining PX plantings. The Solera system of producing PX involves aging the wine in barrel for many years (this one is an average age of 7 years old) allowing fluid (water and alcohol) to evaporate, concentrating the sugar levels and creating an amazing amber liquid that is dark brown in colour.

Incredibly luscious and rich…it’s also incredibly moreish! We’re not the only ones that keep a bottle of this tucked away for special occasions at all times. The guys at the world famous Decanter magazine selected this as one of their Top 10 Australian Wines!

“Renowned for producing fine wines in Jerez, Pedro Ximènez (or PX) can really excel in another part of the world. Intense marmalade aromas with some sweet spice and dried figs. The palate is lusciously rich with some pure marmalade and dried figs characters, very long, sweet and rich finish but with a good freshness.”

And what to pair PX with? Take your pick! Rich foods (sweet or savoury), Christmas pudding, figs, sticky ribs, pâté, blue cheese or drizzle it over pancakes with fresh fruit!

Turkey Flat. Gobble gobble. So what’s with the name? Well the early settlers in the area in the 1840s noticed a large native bird often in the area on the rich flats at the lower end of the Tanunda Creek. Bird lovers will tell you it wasn’t a turkey, it was actually an Ardeotis australis, but for the sake of a good story let’s stick with turkey!

The Schulz family have been running the Turkey Flat vineyards since the 1860s and as a side hussle at the time also had a thriving family butcher business! It was meant to be!
