We love a good Lighthouse. And we love a good Lighthouse Gin even more.

On the North Island’s southern most point is the Cape Palliser Lighthouse, built in 1896 and erected section by section hauled by cast-iron pulleys on a steep, almost inaccessible cliff. It was built almost 50 years before any roads in and out of the area were built so you can imagine what a mission that was!

Baring that in mind the guys and girls at Lighthouse Gin put the hard yards in and refuse to cut corners in producing ever bottle of small batch distilled gin with their name on it. Using fresh zest from New Zealand Navel oranges and Yen Ben lemons and other botanicals like juniper berries, coriander seeds, cinnamon quills, almonds, cassia bark and liquorice root. Using water that travels from high in the Rimutaka Ranges, down to a spring next to the Wharekauhau Country Estate in Palliser Bay.

44ml Lighthouse Gin
1 dash grenadine syrup
2 dashes bitters
3 dashes orange bitters
Shake all ingredients with cracked ice, pour contents into an old-fashioned glass over ice cubes, and serve.
